Warm & Wonderful Chai Honey

Chai is steeped in royal history. It originates from the ancient kingdoms of Southeast Asia, but has since acquired worldwide notoriety.

This warming chai-spiced blend is a wonderful digestive aid and tastes divine.

 

Yields 1 250 mL glass jar

 

Ingredients

  • 3/4 cup (250g) raw honey
  • 2 tbsp (12g) cinnamon (powdered)
  • 1 1/2 tsp (4g) ginger (powdered)
  • 1/2 tsp (1g) clove (powdered)
  • 1/2 tsp (1g) allspice (powdered)
  • 1/2 tsp (1g) nutmeg (powdered)

Optional: 8 drops Medicine Flower Vanilla Flavouring Oil

 

Directions

  1. Place the honey into a sterilized jar or measuring cup and place into a double boiler over low heat.
  2. Gently heat for fifteen minutes or until honey is warm and easy to mix. Do not overheat honey.
  3. In a small mixing bowl, add cinnamon, ginger, clove, allspice and nutmeg. Mix well, ensuring there are no lumps.
  4. Remove honey from heat. Add the spice mix to warm honey and stir until well blended.
  5. If using organic flavouring oils, add and mix well.
  6. Pour into a glass jar using a spatula and funnel if necessary. Seal the jar, label, and store in cool, dark place for approximately two weeks for the flavours to meld. Enjoy!

 

Use

Add 1 tsp of Chai Honey to 250mL hot water, stir and enjoy.

May also be used to enhance a cup of chai, on toast, pancakes, or stirred into herbal elixirs.
